March was a crazy month. I feel like I did way too much and now all I want to do is take a nap. But April is going to be exciting too. This weekend Eric was doing his racing @ OC/RC in Huntington Beach. On Friday night I got to go watch, it was a lot of fun. I almost want to start racing myself. On Saturday, Eric's friends Randy and Rodney were racing, although Eric decided he didn't want to race in such a large race yet (it had super mad skilled peeps and he is still getting used to this track and racing in general) But Eric did take some amazing pictures of the boys races. Meanwhile I went to the Disney Character Warehouse in Anaheim and bought two Pook-a-looz. I LOVE them. I got Kermit and the Mad Hatter. They are so cute it is stupid. After I went shopping I brought Eric Lunch, then we went on a lunch run for the boys. AFter that we went to the Cabrillo Marine Museum, but forgot to bring cash for parking so we looked at the whole thing within an hour, because I was pretty sure I had a dollar in change in my car. LOL! AFter that we got a snack at the Torrance Bakery, then we headed back to the race track because Eric forgot a camera battery. Then we ate at SuperMex and drove home.
Tomorrow we are going to the melting pot for dinner because I got sent a 20 dollar off coupon. I <3 Coupons!
Next weekend, we plan on going to the Butterfly Jungle exhibit at the SD Zoo Safari PArk (formerly known as the Wild Animal Park) I am hoping it isn't crazy hot that day.
The weekend after should see us in Los Angeles as I am baking for the FOL Booksale Bakesale, and I want to go to the LA Spring Fair too.
The weekend after is Easter, and then the month is almost over. May looks to be busy too, but I have a week off work for when Eric's Nephews (and Sister in law) are coming to visit. And now we see why I never blog, I am just too busy!

Dinnertime!
Sunday Night I made Sliders for Dinner. Ever since I saw the cute little hamburger things in a sale ad, I have wated to make them. We LOVE the ready to eat bacon around here 4 slices are 70 calories and that makes this dieter happy. The only thing I didn't love were the buns. They were dry and i could have done without them. We had cheese, tomatoes, bacon, avocado and anaheim peppers to go on them. I made some Elotes in a cup as a side, but learned that you have to use real Mexican cheese or the fake parmesean. The real parmesean doesn't do well in this dish.

Cock-A-Leekie Weekend
This weekend, Eric came up to LA to fix our interwebs... Denise and I are extremely grateful. The next day, I had to work so I went to work, and Eric went to get himself some breakfast while I worked. After that he came and met my coworkers.
After that we left L.A. for destinations further south and decided to go to the little town of Julian...
We had heard that there was good pie there. So we decided to try some...
This is the Peach and Apple pie... it is to die for. Even if you don't like Apple pie. Run, do not walk, to this place to get some at your earliest convenience... I wish I had a stockpile of them, in my freezer.
It is kind of a drive to get there, but the view is amazing, and if nothing else, the pie is worth it....
So, the next day we return to the farmer's market at Hillcrest, where I am convinced to try the scotch egg...
My original reluctance was mostly due to the fact that I, in general do not like eggs, I try to avoid them, unless I am craving them, and even then, I like to not eat them...
It wasn't bad, but not something I would eat everyday...
These, however, I could eat everyday for the rest of my life, and be exceedingly happy...Yummy Carne Asada street tacos.... yum!
Washed down by some of the best Aguas Frescas I have ever had. Eric got Jamaica, and I got Orange Pineapple, both were good, but mine was absolutely freaking fantastic! I want the taco lady to adopt me!
After Brunch of Farmer's Market food, (we also had amazing red velvet cookies of awesomeness!) We headed over to the zoo! There was a lot of traffic getting into Balboa Park though...
We went to the reptile house
And saw some awesome reptiles
including this one who is my favorite of the outdoor lizards on display... He is a Rainbow Skink
After that we went to the Children's Zoo area where we saw this amazing statue of the Lorax. Eric saw it before me, and knew I had to take a picture of it, because I am well known for randomly announcing, "I am the Lorax, I speak for the Trees!" in the middle of random conversations..
We ended the night by going back to the house and making this amazing Scottish soup! It is Eric's recipe and it is amazing! I am glad I know how to make it now!

I'm Lovin It...
Someone whose blog I read did this so I am going to too...
Some things I currently love...
Jurassic Park, The Ride! I love flume rides, and this is better than any other one ever... Why? BECAUSE THERE ARE DINOSAURS! I don't however love it when you have to share a row with people who try to squeeze your lungs out by pushing down on the lap bar....
It hasn't come out yet, so I am not positive I will love it, but the previews are amazing, and it has the incredibly good looking Johnny Depp in it... I want this poster!
A couple of Sundays ago, my friend bridget bought me a snack of regular Hot Cheetos upon her discovery that I had never tried them. I have become a HUGE fan in only a week, and I actually like the baked ones better, because there is less grease!
I love the color blue! It is a happy color and it makes me smile! I also love the Universal Tram Ride!

In Case You are wondering...
So. It has been an interesting week. I am however, looking very much forward to Spring Break which I guess is officially started.
Friday night I came home from work and fell asleep. I didn't eat dinner, I didn't go online for hours. I went to sleep. At 7pm! I did wake up in the middle of the night but was apparently still ready to sleep because when it was time for me to wake up on Saturday for work. I really didn't want to.
Saturday I had a staff meeting at work. We had this most amazing banana choc. chip nut bread. I want to know how to make it. Or go buy like fifty loaves to keep in the freezer. Yes, it is that good.
I created a gator headband craft to match one of the stories from storytime.
I went to El Pollo Inka with Denise and Jessica, where I ate my amazing #8 no egg and put about a third of a bottle of the amazing green sauce on my food. I would put it on almost everything I eat! I love it! One day I will get the Chaufa and eat a whole bottle of it. It is a dietary goal. I will need many Inka Colas that day.
Went back to work and then from 3-5 cleaned out the craft supplies and toy giveaways section of the workroom. I laughed when I discovered that we have a whole basket worth of Harry Potter party supplies. I have corrupted the library. I am looking forward to the party we may or may not be having in July. I <3 Harry Potter.
I came home intending to stay in bed and read. Then one of my coworkers texted me to let me know that her check was already in and so mine probably was too. It was. I am so excited. So, I went out to dinner and the movies with Denise. I tried the new Buffalo Chicken pizza at CPK. It is not bad, but I would like it better if they put the celery on after it came out of the oven. It is probably my number 3 pizza on the menu after the BBQ Chicken Pizza and the Chicken Club Pizza. They are yummys. As always I enjoyed more than one glass of the glorious sugar free peach Iced Tea. It is amazing stuff!
Today I have Sunday School and Church, then I need to get some stuff done at home so that I can go to Disneyland tomorrow! I am going with some coworkers and it should be a lot of fun. I really want my back to co-operate with me though, because one of my co workers hasn't been in a really long time and I want her to have fun.
Then tonight is twenty-somethings bowling! I am bringing at least one and possibly two friends. It should be a blast.
Tuesday I am planning on spending the day around here getting some stuff (taxes!) done and then working in the evening.
Wednesday I am on a normal Wednesday schedule.
Thursday I am supposed to go see the German Cold War art Exhibition at LACMA with a friend from school.
Friday and Saturday I work all day.
I would like to squeeze a trip to the Aquarium in at some point this week, but it depends on how things go.
More details as events warrant! LOL!
Also, tomorrow is the LAST day to get in entries for the plastic egg challenge of the month. Try to wow me folks!

In a Pit...

So I now have this amazing ring. I have never really been a jewelry person, but I needed something concrete to remind me of the lion I am chasing.
Our church recently went throught the book In a Pit With a Lion On a Snowy Day by MArk Batterson. And now our 20-somethings girls group is doing the accompanying study called Chasing the Lion.
I just recently discovered the identity of my lion and it is going to be a long chase so this ring is to remind me when the hunt grows long, of what I am chasing after.
I am so excited for when I can take pride in having captured my lion.

Today I worked from 9-5 which is definitely longer than I usually do on a Saturday. At lunch time, Marcia, my boss asked if I could grab her lunch when I got mine. I said sure and let her pick what I was going to go get. She picked Jack in the Box. While I was there I got the yummy Pumpkin Pie Shake of amazingness. I usually don't like fast food shakes beacuse they taste fake, but this one is super yummy!

Pretty
So I found out from a little bird that my last layout was difficult to read. I hope this one is better because I really like it.
So I would like to ask all my blog readers to pray for a situation at my work. I can't go into what it is, and it is definitely not anyone harrassing me or anything like that. But prayers for wisdom for the people in charge of the situation to have wisdom and insight would be much appreciated.
Ummm, I have to get up early to work on something for school. Prayers for school would be greatly appreciated. It is a stressful time for me right now.
And while I am asking for prayer, lets just remind everyone that my back needs fixing.

Playlist...
When I first heard about project playlist, I thought "Why on earth would I ever need one of those?" But, I have found out that they are amazing! I have four. One for worship, one for general music, one for when I need peppy/ high beat music for cleaning or typing, and one for Christmas.
I think that you can learn a lot about someone by looking at what music they listen to, so I am going to highlight some of my favorite songs from my playlist every once in a while.
Tonight I will feature songs from my general playlist:
Favorite Song: Paper Planes by MIA This song is currently my favorite because it reminds me of my trip. Which I am missing more and more each day. It is a lot of fun, and I get highly overexcited every time it comes on the radio.
Song from ny Childhood: Right Stuff by New Kids on the Block Yep, I was around when they were. I can't believe they are trying to come back, they are so old...
Most Random Song: My December by Josh Groban it is just one of the random songs but it's basically the most random by the fact that it's a Josh Groban cover of what I think is a Linkin Park song. Another random song.... California Love by Tupac
Most Educational Song: We Didn't Start the Fire by Billy Joel Seriously, I used this song to help me get honors on the US History Golden State Test in high school. Which is mostly exciting because I hadn't even taken more than 6 weeks of US history when I took the test.

So, I am at school ungodly early.
I have four things to work on, but in reality, I just don't want to.
I really shouldn't have taken this Colonial America class. It isn't really my interest, and it is a LOT of work. I also don't need it. But it is basically too late. It should be interesting though.
I am kinda hungry but just ate like 3 hours ago and so I shouldn't be.
I did get my grad check done, I just need to have Dr. Jeffers sign off on it and I am good to go.
I have been asked what I want for my birthday and the reality of it is that I just don't know. Anything I want isn't something anyone could give me (except for God) and although I know there is stuff I want, it isn't anything I would ask for lol.
I feel like I am going through a Eustace experience with God lately.(Eustace from Narnia LOL) He is stripping things away from me, and while I recognize the neccesity and benefit of this, I wish it wasn't so painful. I can't wait for this period to be over.... I especially dislike the removal of my guard walls, I HATE feeling vulnerable all the time.
My cousins are taking me out for dinner for my birthday on thursday. It should be fun, I like hanging out with them.
Bleh... I hate being angsty all the time too....
okay Rant over.....
On a lighter note I saw that they have created this kit for slice and bake cupcakes....Yum.. the epitome of laziness......

rambles
Well, I can't say that I am not excited to be leaving on my trip, because I am.
I have been trying to do a deep blog of emotion and God stuff, but I don't really feel like having my business out there for everyone in cyberspace.
Tonight is day two of prayer, and that is where I shall be tonight. Because it is a good place to be!

I found these amazing cookies. They have about 3 pts in them depending on which kind you get. 3 points is a lot for a cookie, but they are worth it for an occaisional treat or for those who don't care about points....
